Cajun “Pulled-Pork” Sandwich

We rub selected pork cuts with cajun spices and herbs, then alder smoke them for a full 6 hours, then slow cook them for yet another 6 hours until they are literally falling apart. We “pull” it apart, then add our own authentic tangy cajun BBQ sauce (never fear - contrary to popular misconceptions, “cajun” does not necessarily mean “hot & spicy”). Pile it on a toasted bun and add more sauce (and onions if you like 'em), and you've got our fabulous cajun “pulled-pork” sandwich.
